Pasta wrapped around red wine braised Wagyu beef shank meat, with carrots, onions, garlic, rosemary and tomatoes, served in a beef broth and finished with basil pesto, gremolata and shaved Grana Padana cheese.

California rabbit tenderloin wrapped in house-cured bacon, wood roasted and finished with a banyuls-mustard-honey vinaigrette, served atop baby greens.

Crab meat seasoned with house preserved lemons, tomato confit, green onions, garlic, lemon grass and a hint of ginger, breaded, fried in rice oil and served with a lemon-pimenton aioli.

Caramelized onion and eggplant topped with nut-crusted goat cheese, baked in the wood oven and finished with a local honey vinaigrette.
